LYKKE CAN - Ignacio Sosa - Natural Pacamara

€13,95
Tax included.

200g coffee beans.

THIRD PLACE WINNER AT HELSINKI COFFEE FESTIVAL IN FILTER COFFEE CATEGORY!

The farm is located at above 1600 meters of elevation and is literally only a few meters away from the border to Honduras. Next to his farm Las Pilas is a river and on the other side of the river is Honduras!
He's got this lovely Pacamara in the fields and has also planted some geishas that we look forward to testing in the near future!
The lot we picked out for this CAN-release is cherry-dried (natural) and full of tropical fruits and sweetness. We sense peaches, strawberries, hubba-bubba-gum with a somewhat "yoghurtie-lactose-kinda-mouthfeel"

Head roaster message:

"Ignacios Pacamara truly represents the pinnacle of El Salvadorian Pacamara. Both in the way the tropical fruits are layered as well as the intensity level thereof. The flavour notes of peaches, strawberry and Hubba Bubba-gum just jumps at you from the cup!"

Roast process:

Pacamara can be difficult to roast if you’re new to it, especially when processed according to the natural method. The beans need enough heat early on to ensure proper inner bean development but also require a soft touch towards the first crack so as not to run away and become unnecessarily dark and bitter. Big beans and low density can cause a perfect storm for an uncontrolled roast profile so focus is a must.

Señor Ignacio Sosa

Chalatenango holds a special place in our hearts as it represents the start of our Lykke journey. The region has some of the countries best conditions to produce excellent coffees and a farmer that has really taken advantage of this is Ignacio Sosa.

His farm Las Pilas is situated at 1600 meters of elevation, right next to the border to Honduras. 2023 was the first year we had the privilege of meeting him and his family when they greeted us in their house for fresh fruits and coffee from the farm. The varieties Ignacio grows here are Pacamara and Geisha. On the property they've constructed a state-of-the-art drying house with elevated tables where they dry their freshly picked coffees safe and sound.

This particular lot of Pacamara stood out for us with its high intensity in flavours. The peaches and strawberry- notes just hit us in the face as we were surpling through the cups and left us with a huge smile on our faces. A smile to represent the sheer joy of being able to offer if here in Scandinavia, but as well since it represents the spark to a great relationship with Ignacio for many years to come!
